Jam and Ricotta Spread

This is a very short and sweet post for Saturday. Saturday morning are bagel mornings for me. I usually eat mine with cream cheese. One day I ran out of cream cheese and butter! I was thinking, "How in the world am I gonna eat my bagel?" I looked in the fridge for answers and found leftover ricotta that was not used up in the last pan of lasagna made. I also had strawberry jam. Guess what happened?

I got out a small bowl. Scooped out two tablespoons of ricotta cheese and one tablespoon of strawberry jam. I swirled the two together. Then toasted my bagel and spread the mixture on the bagel.

The taste was wonderful. It was a gamble. Fortunately, it worked.
