Today is "Z" day! That's right the final day of the Blogging from A to Z April Challenge of 2015. Now this is not the last recipe I'll ever post this year but it is the last of the recipe posts for April 2015. What a way to end the challenge then with zesty pasta dish that is full of flavor and only takes about 30 minutes to prepare. While I do love chocolate, I always felt that a chocolate pie took things a bit too far. I do have my limits. My birthday is next month. My mother asked me what type of cake I wanted her to make for me. I knew I wanted one with strawberries in it. I just did not know which recipe I wanted until now.

Many of us know that our bodies need rest. A good six to eight hours of sleep every night does a body and mind good. However, that is not the only flesh that needs rest. Sometimes the meats we cook need a rest as well. Now they do not need as much rest as we do. Giving those tasty meats a few extra minutes of rest after cooking can make a world of difference.

Thank goodness for Kraft! I have been dreading this letter from the moment I signed up for the Blogging from A to Z April Challenge. Quinoa is something I have yet to try. I keep looking for recipes that will inspire me to try this food one day. I think Kraft may have developed a quinoa dish I am willing to prepare and eat. I like bagels but I am obsessed with onion bagels. They are quite possibly the best bagels. Yes, I will pick an onion bagel over an everything or sun-dried tomato bagel -- both are loved by me as well. There is something about an onion bagel that brings an ordinary sandwich alive for me.

I am not much of a baker. While I have tried my hand at making desserts from scratch, the only dessert I insist on doing that with are cookies. Everything else I take the easy way out for the foundation of the dessert by using a box mix then adding my own twist to it. One of my favorite desserts to do this with are lime bars.

About two years ago, I fell in love with the frittata. I never ate one at a restaurant or anything. The adoration began from that "I Can't Believe It's Not Butter" commercial with Lisa Vanderpump. I thought that frittata looked so good. Then I began seeing frittatas pop up all over the place on TV and in magazines. Then I decided that it was time to try my hand at making one based from an Alton Brown recipe. I made my first one in 2013 and it is my go-to quickie meal.

This is a very short and sweet post for Saturday. Saturday morning are bagel mornings for me. I usually eat mine with cream cheese. One day I ran out of cream cheese and butter! I was thinking, "How in the world am I gonna eat my bagel?" I looked in the fridge for answers and found leftover ricotta that was not used up in the last pan of lasagna made. I also had strawberry jam. Guess what happened?

When I was sick and under heavy medication, I could not consume any alcoholic beverages. I would want a cocktail every now and then. I only wanted one because I could not have one. Seriously, I didn't consume one alcoholic beverage in 2013, so I don't drink that often. I drank a lot of tea and wanted that fizz of my favorite cocktails. One day I decided to put ginger ale in my tea and the rest is history. I got the fizz I wanted without the alcohol.

I am mainly a cereal eater for breakfast with the odd bagel or cup of yogurt thrown in. When it comes to "traditional" breakfast food, I prefer to eat them for dinner. I'll eat pancakes, eggs, bacon, sausage, fried potatoes, etc., for dinner any day of the week. One of my favorite breakfast meals that I like to eat for dinner is a pan seared ham steak with salsa eggs.

I have developed a real appreciation for tea over the past couple of years. I drink different flavors of tea in a variety of ways. We know tea is used in alcoholic drinks – “Hi, Long Island Iced Tea!” -- and I have been curious about other tea drinks. After searching a few drink recipes, I decide on trying one involving Earl Grey tea.

Who doesn't love brownies? I sure do love them but I have to admit that I do not make from scratch. Not because I can't, but I rarely ever buy cocoa. No, I am referring to the hot chocolate packets but that good cocoa you cook and bake with. Therefore, I always use brownie mix. However, I am never satisfied with just ordinary brownies. I experiment so much with the brownie mix that I may as well make them from scratch. Although, I think skipping the brownie base (the mix) allows me to be a bit more creative. One of those moments of creativity resulted in my Brownie Surprise.

The beautiful thing about rice pudding is you can make it a variety of ways. My family loves the baked version that you bake in a cake pan. It is good but rather dry for my personal taste. I prefer arroz con leche, which I found a recipe for on Goya's website a while back. This Spanish rice pudding, which is creamier than and not as thick as my family's baked version, had to be modified due to my lactose intolerance. This is the non-dairy arroz con leche for all of us who just do not do dairy.
