Recipe Time: Chickpea Soup in Black Tea Broth

If you are tired of the standard turkey soup that is made after a holiday meal don't worry I get that way too. Here is an alternative.

This recipe was thought of when on one of those rare occasions we did not have soup in the house. I was starting to feel sick and needed some soup because anything heavier was not going to cut it. I am not a professional cook so I rarely measure anything out. I use spices and herbs to my taste.

1 can of chickpeas
1 can of diced tomatoes (drained)
1 onion, diced
Soul food seasoning
Black pepper
Garlic powder
Dried rosemary
Black spice tea (Celestial Seasonings Decaf India Spice Chai Tea has a good blend of flavors)
2 cups of water

In a medium-sized pot add water, chick peas, tomatoes, and onions. Add your seasoning and spices, stir and bring to a boil. Once the pot is boiling, lower the heat and add three tea bags to the pot. You can go up to five depending on how much of the tea flavor you want in it. Stir occasionally and add more seasoning to your taste. Cook time should be about 30 minutes. Remove the tea bags and serve.

The reason I used tea was to create a richer broth without adding any meat flavoring to it. At the time the thought of meat made my stomach turn so I needed a vegan dish that I could eat. I gave some to my mother without letting her know I used tea for the broth. I waited until she devoured it before I told her what I used because if she knew ahead of time she would not eat it.

If you need a break from meat and want something light with flavor, give this recipe a try. Tweak it to fit your taste. I don't mind that because I always alter recipes to fit my taste. Happy Holidays!
